And talk about luck, just in time for St Patrick’s Day, these big cookies with tasty marshmallow bits are a hit with the young and the not-so-young.   • Butter – Salted and softened butter is what I use for these buttery cookies.
  • Sugars – Like a classic chocolate chip cookie, I use both granulated sugar and brown sugar for the best results and the ultimate taste.
  • Egg – You will need one large egg for this recipe.
  • Vanilla Extract – What is baking cookies without vanilla?
  • Flour & Baking Soda – I use all-purpose flour and fresh baking soda for the best rise.
  • Lucky Charms – Have fun picking the marshmallows out to fold into the bookie batter.

How To Make the best Lucky Charm Cookies

  1. Prep: Start by preheating the oven to 350°F.
  2. Mix wet ingredients: Use a large mixing bowl and an electric hand mixer or your stand mixer to mix the butter and both sugars together until smooth and creamy. Then add in the egg and vanilla extract and mix until they are combined with the butter-sugar mixture.

  3. Add dry ingredients: Next, you will add the baking soda and flour and mix together until all the flour is incorporated.

  4. Fold in Lucky Charms marshmallows: Now gently fold in the marshmallows so as not to break them up.

  5. Dough: Take out a medium cookie scoop and form the cookie dough balls. Place the balls of dough on the large baking sheet, and be sure to leave 2 inches between each dough ball to allow for expansion.

  6. Bake: For chewy cookies, bake in the oven for 10 minutes until perfectly golden brown. Then, remove the cookie sheet from the oven and allow the cookies to cool for a few minutes. Then, you can remove the cookies and place them on a cooling rack.

Helpful Equipment

  • Baking Sheet: My most favorite baking sheets are these USA Pans; pictured above are these Nordic pans I also have in my kitchen.
  • Cookie Scoop: I used a medium, which holds about 2 tablespoons of dough. Check your scoop set, as some vary in size.

Tips

  • Fold in the marshmallows so they do not get crushed.
  • The key to soft cookies is to not over-bake them! They should have crisp edges, but the tops of the cookies will look a little lighter in color.
  • Keep in mind that all ovens bake at different temperatures than what the dial says, so watch your first batch or check the cookies around the 7-8 minute mark to see how they are baking in your oven. I love this thermometer to give mine a check from time to time.

Can I use the Lucky Charm cereal or just the marshmallows?

For this Lucky Charm Cookies recipe, I only use the marshmallow bits.

Why aren’t my cookies soft?

The reasons your cookies might not be soft and chewy are from adding too much flour or over-baking! Measure your flour by spoon and sweep method and make sure not to over-bake them!

What is the spoon and sweep method?

First, fluff the flour inside the container. Then, instead of dipping the measuring cup into the container of flour, always use a spoon to scoop the flour into the measuring cup until it’s overflowing. Then, level the measuring cup gently with the back of a knife or level. This prevents the flour from being packed so firmly in the cup that you would have more flour than the recipe calls for. Also, be sure not to tap the measuring cup when filling it, as this will also pack in extra flour.

Storage

Storage: Store these Lucky Charms soft-baked cookies in an airtight container at room temperature for 6 days.

Freeze: The tasty treat cookies can be frozen in an airtight freezer bag for up to 2 months. When ready to serve, thaw them at room temperature!

  • 1 cup salted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 1 ½ cups lucky charms, marshmallows only

Instructions

  • Preheat the oven to 350°F.

  • Use an electric hand mixer (or stand mixer) to whisk the butter and both sugars together for 3-5 minutes or until smooth and creamy.

  • Whisk in the egg and vanilla until the ingredients are just combined with the creamed sugar.

  • Add the baking soda and flour. Reduce the speed of your hand mixer to low and gently whisk in the dry ingredients until no clumps of dry flour remain in the cookie dough.

  • Fold in the lucky charms marshmallows until they are evenly distributed throughout the cookie dough.

  • Use a large cookie scoop (about 2 tablespoons in size) to form cookie dough balls and place on a baking sheet, leaving 2 inches between each dough ball. Bake for 10 minutes or until just golden.

  • Allow the cookies to cool for a few minutes before transferring them to a wire cooling rack.

  • Serve and enjoy!
