Roasting asparagus is the perfect and easy way to enhance the delicate flavors of the asparagus and give the asparagus tips a bit of char. Because asparagus is one of the tasties vegetables to roast, it's impossible not to love this recipe.

Spring is here and we are finding fresh asparagus in the farmer's markets and the grocery stores. One of the best ways to enjoy is to oven roast it.

Pictured on the tray is two pounds of asparagus. Listed in the recipe card are instructions for a pound of asparagus. This recipe can be easily multiplied or divided. Roast an extra pound or two to make cream of asparagus soup.

Ingredients needed to make this recipe:

  • Asparagus, fresh
  • Olive oil
  • freshly grated parmesan cheese
  • salt and pepper

  1. Get the bunch of asparagus and leave them bundled in the rubberband.
  2. Place the asparagus on a cutting board and firmly hold the tip end of the asparagus with one hand.
  3. Using a sharp knife,use a slicing motionto chop off 1 inch of the woody ends of the asparagus.
  4. Make sure that the ends of the asparagus is moist. Don't dry the asparagus.
  5. If the asparagus is dry, slice off another ½ inch.

  • After the roasted asparagus in the oven come, add lemon zest or fresh lemon juice over them for a bright, fresh flavor.

  2. Trim the asparagus and arrange the asparagus in a single layer on a sheet pan.
  3. Drizzle the asparagus spears with olive oil and sprinkle with salt and pepper, gently tossing to coat the asparagus with the oil and seasonings.
  4. Cook asparagus in the oven.
  5. After you bake the asparagus, remove the stalks of asparagus from the oven and toss them.
  6. Return to the oven and roast until the tips of the asparagus turn a bit charred and the stalks are tender. Keep in mind that thick asparagus spears will need slightly longer cooking times.

  • 1 lb asparagus (fresh)
